Ken worked as a chef for Dave’s Kitchen in Launceston, Tasmania for two years prior to making the permanent move to Melbourne. He has been living in Melbourne since 2004, studying and developing his culinary skills in various restaurants and cafes around town, prior to opening up Nem N’ Nem with Kathy in 2013. Kathy’s education background is in Business Information Systems. Since moving to Australia in 2000 she has practiced a number of occupations in Information Technology, Real Estate and Mortgage Broking. Kathy is the backbone for the day to day running of Nem N’ Nem and hopes to guide the establishment towards its goal of opening up a laid back café style restaurant.
Both Ken and Kathy feel very lucky to have grown up in Hanoi- the capital city of Vietnam. The food available in Hanoi’s narrow alleys and tree-lined boulevards is just as much a part of the city, as its lakes and old world architecture. In fact, all of these elements combine with the determined spirit of the Vietnamese people to produce a lively culinary scene that is both diverse and confronting.
Nem N’ Nem reflects Ken and Kathy’s personal philosophies around food, the Vietnamese culture and integrating good quality and tasty food into the Australian diet. Their attitude to life and work is heavily geared towards the simple and natural things in life, such as healthy food, family, good people and positive experiences. This is very much reflected in the type of homely, nutritious meals they create.
Ken and Kathy’s personal vision is to deliver a product that is creative, innovative and makes people happy. Cooking is an extension of their imagination and every meal they prepare is an investment of time, commitment and joy. Nem N’ Nem was founded with the simple aim to provide people with a unique eating experience which exceeds the quality of Vietnamese food they may have already eaten in Melbourne.
From a passion and love of cooking combined with pride of their rich Asian heritage, Ken and Kathy aim to bring the taste of Vietnamese street foods to Melbourne food lovers by adding more diversity to the local food truck scene. They aspire to provide simple, tasty and high-quality delicious meals that their customers will love and return for again and again.
